It all starts with a steel bar. Raw, cold, shapeless. In the hands of our cutlers, it becomes blade, spring, plate, then knife. This transformation from raw metal to finished object owes nothing to chance and everything to the gesture: precise, patient, passed down in the workshops of Forge de Laguiole. This is where the knife is born.
The first gesture is the most radical. The French steel bar enters the fire, heated to over a thousand degrees, to cherry red. Under the power hammer, it flattens, lengthens, takes on the primitive silhouette of the blade. This founding moment determines everything that follows: hardness, balance, edge — quality. Once forged, the blade is trimmed and stamped. Then comes the quenching, a bath in hot oil, controlled cooling that permanently sets the steel's hardness.
At the Forge de Laguiole manufacture, the sawing workshop selects and cuts the materials used for handles, such as wood or horn. Each piece is carefully chosen, then cut to preserve its finest parts. This work, carried out on-site, ensures material quality from the very beginning of knife production.
The cutler works the components made upstream in the workshop, the metal parts and materials selected during sawing. He meticulously prepares each element so that the assembly is as precise as possible. Once the parts are assembled, he shapes the handle on backstands fitted with abrasive belts of different grits, to harmonise shape and balance. For Collection range knives, he also brings the bee and spring to life, entirely hand-chiselling them. Each gesture of the cutler, performed by eye, transforms these individual parts into a unique knife, reflecting the craftsmanship of Forge de Laguiole.
At Forge de Laguiole, we don't select knives from a catalogue. We make them. From the Aubrac, in our workshop in the heart of Laguiole village, every blade is forged, every handle shaped, every bolster adjusted by our cutlers. What you hold in your hands is not a product. It is the result of hours of work, of gestures passed down from generation to generation, of a standard that only a manufacturer can guarantee.
There are dozens of knives that bear this name. The original comes from here. Forge de Laguiole is rooted in the village that gave rebirth to the legend, at 1,000 metres altitude, on the Aubrac plateau, where the knife was conceived in the 19th century for the local farmers. When you choose a Forge de Laguiole knife, you are not choosing an aesthetic. You are choosing a verifiable origin, a real place, a living history.
